An Instant Pot is a small kitchen appliance that works as a pressure cooker, slow cooker, rice cooker and steamer. I’m sure you know what a slow cooker and rice cooker do but maybe you’re less familiar with the idea of cooking in a pressure cooker and steaming. So let me address those briefly.
A pressure cooker is a pot with a lid that seals tightly, allowing for cooking food at low temperatures under high pressures. Food cooks much faster in a pressure cooker than regular pots/pans because of the heat conducting properties of stainless steel, aluminum or ceramic cooking surfaces that are generally used in pressure cookers. Additionally, pressurizing the pot with air/steam pushes the boiling point of water up, which allows for cooking at lower temperatures.
For example, a pot roast usually takes around 3 hours to cook using a low temperature on the stove top or in an oven. In a pressure cooker, you can cut that time to 30 minutes.
