Thaw in the fridge overnight and reheat however you prefer.
How long can I store Pineapple Beef in the fridge?
Leftovers can be stored in your fridge for up to three days safely. To reheat, place on the stove in a saucepan with a small amount of water until warm. Or microwave on a microwave safe plate until warm.
What should I serve this with?
I like to serve my pineapple beef with steamed rice. If I want to get fancy and festive I make cilantro lime rice to go with my beef. However, if Iโm in a hurry I will just use regular steamed rice. I typically also add in a side salad with a ginger dressing on the side for my vegetables.
Instant Pot Pineapple Beef
- ground beef
- red bell peppers
- pineapple chunks; drain half the juice
- garlic
- minced ginger
- coconut aminos or teriyaki sauce
- brown sugar
- cornstarch
- pepper
How To Make
Place ground beef into the instant pot. Turn saute mode on and click it a second time to make it on high heat saute mode. Add in garlic and ginger. Cook until meat is browned.
Add in pineapple and red peppers. Place the lid on the pot for 2 to 3 minutes. Open to stir. This will make the peppers tender. No need to pressure cook.
Mix together coco aminos or teriyaki sauce with the cornstarch and brown sugar. Whisk well. Add to the beef mixture and on saute mode keep stirring the beef until the cornstarch thickens the juices.
Add in pepper and stir well. Serve over rice. Top with sesame seeds.
