Instant Pot Beef Tomato Soup is a classic and hearty comfort meal made right in your pressure cooker.  This soup is loaded with beef and tomatoes and makes for a perfect dinner or lunch on a chilly day.

Frequently Asked Questions About Instant Pot Beef Tomato Soup

Can I use a different type of beef 

Yes, you could use ground beef or a roast cut up into chunks.  If you are using ground beef I would recommend browning your meat on the saute function in your Instant Pot.  Be sure to drain the grease and scrape the bottom of your Instant Pot well to prevent getting the burn notice. 

Can I freeze this soup for later 

Yes!  This soup freezes well.  However, I recommend freezing the soup without the pasta.  The pasta will freeze okay, but it will be a little mushy once it is thawed.  If you freeze your soup without the pasta simply reheat on the stove in a saucepan or in your Instant Pot for about 2 minutes on manual high pressure and then add in your pasta and follow the steps to cook your pasta.

INGREDIENTS FOR INSTANT POT BEEF TOMATO SOUP

  • white onion; diced
  • beef stew meat
  • cans stewed tomatoes
  • italian parsley; chopped
  • fresh basil; chopped
  • beef broth
  • water 
  • cracked black pepper
  • 6 oz rotini pasta
  • grated parmesan for topping
  • fresh parsley for topping

How To Make

In the instant pot add in onions, beef, and give a good stir. Add in stewed tomatoes, parsley, and basil. Fold in the herbs. Pour in beef broth and water. Add in pepper. Stir well. No salt is needed as the tomatoes should add the salt.

Place the lid onto the instant pot. Set the valve to a sealed position. Press the pressure cook or manual button and set the timer to 30 minutes. Once the instant pot stops counting and beeps release the pressure.

Cook the pasta stove top as per directions on the box. Drain and add to the soup. 

Serve in a bowl topped with parmesan cheese and fresh parsley. 

Cooking Tips

  • Save leftover fresh herbs by freezing them in an ice cube tray with water.  This helps reduce kitchen waste. 
  • Use bouillon if you do not have broth on hand
  • Use any type of pasta, but I prefer to use a round noodle with ridges like penne or rotini,
  • Add a bag of frozen mixed vegetables before pressure cooking to make your soup a little more filling and hearty

What To Serve With Instant Pot Beef Tomato Soup

I serve my Instant Pot Beef and Tomato soup with either a light salad with an oil based dressing such as italian or a vinaigrette.  Sometimes I will serve with garlic toast, a loaf of homemade french bread, or even some fresh yeast rolls.  

Want to serve with yeast rolls and get a fresh baked taste without doing the work?  Try the Rhodes brand frozen yeast roll dough in the freezer section of your local grocery store.  All you need to do is allow it to rise and then bake. They taste fresh without the hassle.

Notes

One of my favorite ways to top this soup is by using croutons or tortilla strips.
