This week in homeschool we are learning about the space galaxy.  When we started the chapter I thought to myself what could I do to make this chapter more fun.  I remembered seeing the new galaxy chocolate morsels at my local Walmart.  I knew that I could come up with a fun dessert to help make our chapter studies a little more fun.  Plus, who doesnโ€™t love eating a sweet treat while reading about space?

Where do I buy Galaxy Chocolate Chips? 

Galaxy Chocolate Chips are a new chocolate chip that is silver and sparkling.  They are made by the Nestle brand. I purchased mine at my local Walmart.  However, Iโ€™ve also seen them at my local Kroger store.  So, check your favorite local grocer or big box store to find the galaxy chocolate chips. 

What is sanding sugar and where do I buy it? 

Sanding sugar is dyed crystalized sugar like sprinkles that are made for decorating desserts.  Iโ€™ve used sanding sugar on cookies, cakes and brownies.  It comes in a variety of colors however for these Galaxy Chocolate Chip cookies you will need silver sanding sugar.  I purchased mine at this link on Amazon.  You can also purchase sanding sugar at Walmart in the baked goods decorating aisle which is usually near the birthday supplies.  Or, you can purchase sanding sugar on the baking aisles at your local craft stores.

Can I freeze Double Chocolate Galaxy Cookies

Absolutely, you can freeze these double chocolate galaxy cookies.  You can freeze the cookie dough once you have shaped the dough into balls for up to 3 months.  You can also freeze the baked cookies in a tightly sealed container or freezer bag for up to three months.  To thaw the baked cookies just place on the counter overnight to allow them to come to room temperature.  Once they have been frozen and thawed you will want to eat your cookies within 5 days. To thaw the cookie dough simply place the frozen dough in the fridge overnight.

Can I use salted butter for baking cookies instead? 

Yes, you can use salted butter.  Do not leave the salt out of your dough though.  Your all purpose flour needs the salt for it to rise.  You can reduce the salt to one half a teaspoon if you are using salted butter to prevent your cookies from being overly salty.

Double Chocolate Galaxy Cookies

  • unsalted butter, softened
  • brown sugar
  • sugar
  • eggs
  • vanilla
  • All purpose flour
  • cocoa powder
  • baking powder
  • salt
  • semi-sweet mini chocolate chips
  • disco chocolate chips
  • silver sanding sugar

How To Make 

Preheat the oven to 350 degrees. Prepare a large, rimmed baking sheet with parchment paper.

In a mixing bowl, cream the butter, brown sugar, and sugar until light and creamy, about 5 minutes.

Beat in the eggs and vanilla.

In a separate bowl, whisk together the flour, cocoa, baking powder, and salt. Add to the mixer and beat until well mixed.

Fold in the mini chocolate chips and about ยผ cup silver sanding sugar.

Using a cookie scoop, portion the cookie dough into balls. With half of the cookie dough balls, dip in remaining silver sanding sugar and press three to four plain chocolate chips (from the disco chocolate chips) into the top of the cookies. With the other half of the cookie dough balls, press three to four glittered chocolate chips into the top of the cookies.

Bake for 10 minutes before removing from the oven. Allow the cookies to cool completely on the baking sheet as they will continue to cook from the residual heat.

Store in an airtight container for up to one week.

You can use other types of sprinkles or crystalized sugar if you prefer.ย
