WHAT YOUโLL NEED
Sweet Potatoes – I used fresh but canned would work as well.
Butter – I used salted butter, but if you have unsalted that work just fine.
Cream – heavy whipping cream or heavy cream
Eggs – Large brown or white eggs. I used free range white eggs.
Sugar – brown sugar packed. Light or dark brown sugar will work. I used light.
Cinnamon – Ground cinnamon. I used Mccormick Cinnamon.
Marshmallows – I use Jet Puffed mini marshmallows. If you are using large marshmallows I recommend chopping them for a faster melting.
STEP BY STEP INSTRUCTIONS
Step 1. Add the sweet potatoes to the bowl of the slow cooker.
Step 2. Mix in the butter, heavy cream, eggs, brown sugar, and cinnamon. Stir to combine.
Step 3. Place the lid on the slow cooker and cook on low for four hours.
Step 4. Immediately before serving, top the sweet potatoes with the marshmallows. Place the lid on the slow cooker and cook for 3 to 5 minutes, until the marshmallows begin to melt.

My favorite thing about this Slow Cooker Sweet Potato Casserole is that since it cooks right directly in your slow cooker, it can stay warm for hours. If you are attending a potluck or party and need to bring a dish this is perfect as it travels well right in your slow cooker.
What Additional Toppings Can I Use for Slow Cooker Sweet Potato Casserole?
You can top your casserole with pecans if your family likes nuts. You could also use glazed pecans that give the dish a crunch plus a little additional sweetness. I have also dusted the top of the marshmallows with a cinnamon sugar mixture to give it just a little more sweetness and cinnamon flavor. Mix together one tablespoon of granulated sugar and one half teaspoon of cinnamon and sprinkle on the top of your casserole when you add the marshmallows.
How do I store my Slow Cooker Sweet Potato Casserole?
Store any leftovers in the fridge for up to three days. I like to reheat my leftovers in the oven to give them a freshly made taste. You could also reheat in the microwave if you are in a hurry or you are taking leftovers to work.
