Pumpkin Blondies are chewy delicious treats that are loaded with pumpkin flavor and chocolate chips.
WHAT YOU’LL NEED
Flour- All purpose or plain flour
Spices and Seasonings – Baking powder, cornstarch, salt, vanilla extract, pumpkin pie spice, and ground cinnamon
Butter – I used salted, you could use unsalted if you would like
Sugar – dark brown sugar.
Egg – one large egg. Brown or white
Puree – Pumpkin Puree canned or homemade
Chocolate Chips – I used semi sweet, but you can use milk or dark chocolate.
STEP BY STEP INSTRUCTIONS
Step 1. Preheat the oven to 350 degrees and line an 8×8 baking pan with parchment paper.
Step 2. In a medium bowl, whisk together the flour, baking powder, cornstarch, and salt. Set aside.
Step 3. In a separate bowl, beat together the butter and brown sugar until smooth and creamy.
Step 4. Add the egg and vanilla and beat to combine.
Step 5. Mix in the dry ingredients until well mixed.
Step 6. Separate half the batter into a different bowl and add the pumpkin, pumpkin pie spice, and cinnamon. Mix to combine.
Step 7. In the other bowl, fold in the chocolate chips.
Step 8. Spoon each batter into the lined baking dish, alternating between pumpkin batter and chocolate chip batter. Then, use a flat spatula to smooth the batter into the pan.
Step 9. Bake in the preheated oven for 25 to 30 minutes, until a toothpick inserted into the center comes out clean.
Step 10. Allow the blondies to cool completely in the pan, then remove them from the pan and cut them into 9 bars before serving.
What does a blondie taste like?
Blondies are a sweet and chewy baked treat that tastes like a caramel vanilla brownie. Blondies are similar to brownies in texture but do not include chocolate.
Can I use light brown sugar instead of dark?
You can use light brownie sugar instead of dark, however it will slightly alter the taste. Dark brown sugar is what gives blondies more of the caramelized sweet taste.
How do I store Pumpkin Blondies?
You can store your treats on the counter in a tightly sealed container for up to five days. If you don’t plan to eat them all in five days, they do freeze well. All you need to do is wrap them individually with plastic wrap or wax paper, and then place the wrapped blondies inside of a freezer bag into the freezer. They can stay in your freezer for up to 6 months.
