Under The Sea Rice Krispie Treats

These Under the Sea Rice Krispie Treats are one of those fun little desserts that look way fancier than they actually are. With bright blue candy coating, pink candy shells, graham cracker “sand,” and pearl sprinkles, they’re perfect for birthday parties, summer treats, or any mermaid-themed celebration. I love making treats like this because they come together quickly without turning my whole kitchen upside down.

I first made these for a beach-themed party, and the kids absolutely lost their minds over them. The best part is that you can keep things simple by using store-bought Rice Krispie treats, which saves so much time when you’re already busy planning everything else. I’m always here for a shortcut that still looks cute on the dessert table.

For this recipe, I made two of the shell molds. However, if you don’t want to make your own decorations, you can purchase sea themed sprinkles instead.

Instructions

  • Line a baking sheet with parchment or wax paper.
  • Melt the pink candy melts by microwaving for 30 second increments, stirring well in between.
A bowl of bright pink melted candy coating with a spoon inside, next to a bowl of Rice Krispies treats and several blue striped straws.
  • Use a spoon to drop the candy into the shell mold, and use a toothpick to ensure that the shells are evenly filled with the candy.
A round pink silicone mold with sea animal shapes, a few blue and white striped straws, and a bowl of Rice Krispies treats on a white surface.
  • Allow those to set, about 20 minutes, then remove from the mold. We made two molds full.
A white plate with small, pink sea-themed candies shaped like shells and starfish; striped blue straws and a bowl of rice treats in the background.
  • Discard the rest of the pink candy.
  • Add the graham cracker sheets to a gallon storage bag and crush to crumbs.
A white bowl filled with crushed graham crackers sits on a white surface next to several blue and white striped paper straws.
  • Melt the blue candy melts by microwaving for 30 second increments, stirring well in between, until melted.
  • Add the paper straws to one end of the rice Krispie treats.
Nine rectangular Rice Krispies treats with blue and white striped sticks inserted, arranged on a sheet of parchment paper.
  • Dip the treats into the melted blue candy.

Wendy’s Tips

  • Make sure the candy melts are fully smooth before dipping the treats for the best coating.
  • Work quickly once you dip the treats so the graham cracker crumbs and decorations stick before the candy hardens.
  • If the candy melts seem too thick, stir in a tiny bit of coconut oil or shortening to thin them out.
  • Tap the shell mold gently on the counter after filling to remove air bubbles.
  • You can swap the blue candy melts for teal or purple for a different mermaid vibe.
  • Try adding edible glitter for extra sparkle on the finished treats.
