In a large mixing bowl combine the butter, sugar until combined. Then add the lemon juice, lemon zest, and eggs and whisk until smooth.
In a separate bowl mix the flour, baking powder and salt. Slowly add the dry ingredients until the wet ingredients and stir until combined.
Gently fold in the white chocolate chips.
Bake in the 350 degrees preheated oven for 30 – 35 minutes.
Meanwhile, combine the powdered sugar, lemon juice, and lemon zest until smooth.
Drizzle the glaze over the warm blondies, and allow them to cool completely before cutting.
Hint: If you don’t line your baking pan with parchment paper, you will need to spray it with nonstick cooking spray instead.
Storage
Storage – Blondies should be stored in an airtight container at room temperature for up to 3 days. After that, they can be stored in the refrigerator for up to 5 days.
Freezing – You can also freeze blondies by placing them in an airtight container or wrapping them tightly in plastic wrap. Simply thaw them at room temperature for a few hours before serving.

- Once you add the dry ingredients to your wet ingredients be careful that you don’t overmix. Overmixing can cause you to have tough blondies.
- You can skip the white chocolate chips, or even use lemon chips instead if you want a little extra lemon flavor.

- 1 cup (unsalted butter melted
- 1 ½ cups granulated sugar
- ½ cup fresh lemon juice about 2-3 lemons
- Zest of 2 lemons
- 3 large eggs
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup white chocolate chips optional
For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon

- Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, whisk together the melted butter and granulated sugar until well combined.
- Add the lemon juice, lemon zest, and eggs, and whisk until smooth.
- In a separate bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the white chocolate chips if using.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
