Hint: If you are using a fatty cut of ground beef make sure that you drain off the excess grease before you add in the vegetables.

Storage

Storage – Store leftovers in an airtight container in the fridge for up to 3 days. I like to cover my casserole dish with plastic wrap to keep it fresh since I don’t have a lid for it.

Freezing – Another great thing about this recipe is that it’s freezer-friendly. Just prep the casserole as directed and then wrap it in plastic wrap and aluminum foil and store it in the freezer for up to three months. Thaw in the fridge overnight before baking as directed.

Reheating – Reheat the entire casserole in the oven at 350 degrees for 15-20 minutes or until bubbly. Or reheat single servings in the microwave for 1-2 minutes.

Wendy’s Tips

  • Using Nacho Cheese Doritos instead of the tortillas will give this casserole even more flavor.ย
  • You can also use leftover taco meat to make this tasty recipe.ย
  • Black beans also make a great addition to theย cooked beef and sauteed vegetables if you want a little more fiber.ย
  • Top this casserole with any of your favorite taco toppings, like a dollop of sour cream.ย
