This King Ranch Casserole with Beef is a hearty and delicious dish that is perfect for your next dinner. This Tex-Mex casserole combines layers of tortillas, ground beef, and cheese, for the ultimate comfort food experience.
My family has fallen in love with this King Ranch Chicken Casserole. So, I decided to change it up and make it with beef instead! It was a hit with my whole family.

Ingredients

- ground beef – Ground turkey can also be used.
- onion – I prefer yellow onions for cooking, you can also use white onion.
- bell pepperย – Any color, just use what you have on hand.
- garlic cloves – Or jarred minced garlic or a teaspoon of garlic powder.
- Rotel – Or diced tomatoes with green chilies
- cream of mushroom soup – You can also use cream of onion soup or cream of chicken soup.
- cream of chicken soup
- sour cream – Greek yogurt also works well.
- chili powder and cumin – If you don’t have both of these spices, you can use a taco packet instead.
- Salt and black pepper
- corn tortillas – Or tortilla chips or Doritos
- shredded cheddar cheese – Mexican blend cheese also works well.
Instructions

- In a large skillet brown the ground beef until done. Then add the onion, bell pepper, and garlic and cook until softened.
- Then add the tomatoes, condensed soups, sour cream, and seasonings. Simmer for 5 minutes.
- Place a layer of chopped tortillas in the bottom of your prepared casserole dish.
- Top tortillas with beef mixture, and then shredded cheese, then repeat layers again. End with a layer of shredded cheese.
- Bake in the 350-degree preheated oven for 30-40 minutes.
- Garnish with fresh parsley, cilantro, or sliced green onions before serving.
Hint: If you are using a fatty cut of ground beef make sure that you drain off the excess grease before you add in the vegetables.
Storage
Storage – Store leftovers in an airtight container in the fridge for up to 3 days. I like to cover my casserole dish with plastic wrap to keep it fresh since I don’t have a lid for it.
Freezing – Another great thing about this recipe is that it’s freezer-friendly. Just prep the casserole as directed and then wrap it in plastic wrap and aluminum foil and store it in the freezer for up to three months. Thaw in the fridge overnight before baking as directed.
Reheating – Reheat the entire casserole in the oven at 350 degrees for 15-20 minutes or until bubbly. Or reheat single servings in the microwave for 1-2 minutes.

Ingredients
- 1 pound ground beef
- 1 onion diced
- 1 bell pepper diced
- 2 cloves garlic minced
- 10 ounces diced tomatoes with green chilies drained
- 10.75 ounces cream of mushroom soup
- 10.75 ounces cream of chicken soup
- 1 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 12 corn tortillas cut into bite-sized pieces
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef until browned.
- Add diced onion, bell pepper, and garlic; sautรฉ until vegetables are softened.
- Stir in diced tomatoes with green chilies, cream of mushroom soup, cream of chicken soup, sour cream, chili powder, cumin, salt, and pepper.
- Simmer for 5 minutes.
- Layer half of the tortilla pieces in the prepared baking dish.
- Top with half of the beef mixture, spreading it evenly.
- Sprinkle with half of the shredded cheddar cheese.
- Repeat the layers with the remaining tortilla pieces, beef mixture, and cheese.
- Bake in the preheated oven for 30-40 minutes or until the casserole is hot and bubbly, and the cheese is melted and golden.
