WHAT YOU’LL NEED

Chicken Tenders – Sliced boneless skinless chicken breasts or thighs will also work

Bell Peppers –  Any color will work just fine.  I used red and green peppers.

Basmati Rice – white, brown or jasmine rice could also be used

Saffron –  dried, this is essential to the flavor of this dish.

Curry powder – dried, any brand will suffice.

Frozen mixed vegetables-  mix corn, carrots, peas and green beans

 This recipe also calls for seasonings, onions, and other staple ingredients. 

STEP BY STEP INSTRUCTIONS

Step 1. Turn on the Instant Pot ON and select “sauté” mode. Add half the olive oil to your Instant Pot.  Next you need to add the diced chicken and cook for 5 – 8 minutes.on all Make sure that you stir your chicken to brown it on all sides.  You do not need to cook your chicken all the way through. Remove chicken from the Instant Pot and set to the side.

Step 2. Add half of the olive oil, onion, peppers, garlic. Saute 3-5 minutes, stirring often. I cook my onions and peppers until the onions are almost clear.Lastly,  add chicken broth, saffron, frozen vegetables, and cooked chicken. Mix to combine. Cook for 5 minutes.

Step 3. Secure the lid to the Instant Pot. Select manual cooking time to 10 minutes. After cooking time finishes allow the pressure to release on its own for 10 minutes. Turn the valve to vent to release pressure once the 10 minutes has passed.  Then remove the lid. Press “cancel”. Garnish with diced green onions

TIPS AND FAQS

Make sure the chicken that you use is boneless and skinless and cut into chunks for even cooking. 

Do not pre-cook your rice.  You want to add raw rice to your pot.  

Serve with a side salad, or vegetable.  I usually serve mine with roasted or steamed broccoli or a side garden salad. 

HOW TO REHEAT THIS DISH?

Leftovers taste better if they are reheated in a skillet.  Place your skillet on your stove on medium high heat.  Pour a small amount of olive oil or vegetable into your skillet, then add your leftover Arroz Con Pollo, and saute just until heated through.  If you microwave your leftovers instead, set your microwave to 50% power for best tasting leftovers.

Ingredients

  • 5-6 boneless chicken tenders

Instructions

  • Turn on the Instant Pot ON and select “sauté”
  • Add the olive oil.

  • Saute’ 3-5 minutes, stirring often.
  • Add chicken broth,rice, saffron, frozen vegetables, and cooked chicken.
  • Mix to combine.
  • Cook for 5 minutes.
  • Secure the lid to the Instant Pot.
  • Select manual cooking time to 10 minutes.
  • Pressure release on its own for 10 minutes.
  • Turn the valve to Vent to release pressure.
  • Then remove the lid.
  • Press “cancel”.
  • Garnish with diced onions

Notes

If you would like to cook this meal ahead I recommend you only cook the chicken and veggies ahead, and cook the rice fresh.
