Wendy’s Tips

  • Pat the catfish dry before cutting so the coating sticks better.
  • Shake off extra breading before air frying to avoid dry spots.
  • Don’t overcrowd the air fryer basket — cook in batches if needed.
  • Spray the nuggets generously with oil for the crispiest crust.
  • Variation: Swap catfish for tilapia or cod if that’s what you have on hand.
  • Spicy Option: Add a pinch of cayenne or hot sauce to the buttermilk wash.

FAQ

Do you have questions about this recipe? Here are the answers to the most commonly asked questions.

Can I make these in the oven instead of the air fryer?

Yes! Bake at 425°F on a greased baking sheet for about 15–18 minutes, flipping halfway through.

How do I know when the catfish nuggets are done?

They should be golden brown on the outside and flake easily with a fork on the inside.

Can I use regular milk instead of buttermilk?

You can, but buttermilk gives better flavor and helps the coating stick. In a pinch, add a splash of lemon juice to regular milk.

Do I need to flip the nuggets while cooking?

It’s not required, but flipping halfway can help them brown more evenly.
