Slow Cooker Brown Sugar Carrots
Crock pot brown sugar carrots are baby carrots simmered slow in a brown sugar and honey glaze. The glaze turns sticky and caramelized, so every bite gets that sweet, buttery coating. This dump-and-go side works for a holiday table or a weeknight, and I’ll show you the glaze trick.

- Flavor: sweet, buttery, caramelized brown sugar glaze
Why This Crock Pot Brown Sugar Carrots Recipe Works
This is the easiest crock pot brown sugar carrots recipe, with one spice instead of three. Other versions I researched use a full spice blend of cinnamon, nutmeg, and cloves. My version keeps it to allspice, so the carrot flavor still comes through under the glaze.
I always stir the carrots once at the two-hour mark so the glaze coats everything evenly. Skipping that step leaves the carrots on the bottom drenched and the top ones dry. Once I started stirring halfway through, every carrot came out glazed edge to edge.

Ingredients
- Baby carrots – these cook evenly and need no peeling or chopping, so prep stays fast.
- Butter – it melts into the glaze and gives the sauce a rich, silky finish.
- Brown sugar – this is what caramelizes into that sticky glaze everyone loves.
- Honey – it adds a floral sweetness and helps the glaze cling to the carrots.
- Salt – a small amount balances all that sweetness so the dish doesn’t turn cloying.
- Allspice – this brings warmth without the fuss of a three-spice blend.

How To Make

Pour the water into the bottom of the slow cooker. Add carrots.

In a small bowl, mix the brown sugar, honey, allspice, and salt. Top the carrots with the mixture.

Place butter pieces on top of all ingredients.
Cover slow cooker with lid and cook on HIGH for 3-4 hours, stirring after 2 hours.

Open the slow cooker and check carrots for doneness. They should be soft. If so, they are ready to be served. If not, cook for an additional 15 minutes and check again. Repeat until desired doneness is achieved.
Cooking Tips
- Slow Cookers can cook differently. The time and temperature is based on my slow cooker. However it should cook well for all modern slow cookers.
- If you want a thicker sauce remove carrots from the slow cooker once they are done, and turn the slow cooker on high and allow the glaze to thicken.
- Want a more colorful side dish? Use rainbow baby carrots instead of orange carrots.
