My grandmother was an amazing baker.  One of my favorite cookies that she used to make were these Lace Cookies.  They are so simple yet delicious.  I alway loved how thin and dainty they looked.  It’s a delicate flower that is bursting with a sweet caramel flavor.  One of the best things about these Lace Cookies is that they require no special ingredients.  I think that is why my grandmother always made them.  She always kept a stocked pantry so she had the ingredients needed on hand at all times. . 

What are Lace Cookies? 

 Lace Cookies are very thin almost see through cookies.  They are made on the stove top.   They taste like sweet brown butter and caramel all rolled up into one cookie.   Sometimes you will find oats in lace cookies.  Other times you will find nuts in lace cookie recipes.  For this recipe I used oats because my family are not fans of nuts.  You only need 8 basic ingredients to make these cookies.  

 

Why do I need to firmly pack the brown sugar for these cookies?

 Typically when you are packing brown sugar to bake you don’t need to use a lot of force to pack the sugar.  For this recipe I want you to press firmly when you are packing your brown sugar.  Try to get as many air pockets out as possible.   I always recommend packing brown sugar because it helps to remove air pockets in the sugar.   Brown sugar is very sticky and likes to clump together.  By forcefully packing the brown sugar you are removing excess air to ensure a proper measurement.  Getting a proper measurement in baking is very important. 

Are these cookies crispy or soft?  

 Lace Cookies are crispy.   Usually when I make a cookie recipe I aim for a soft and chewy cookie.  However, these Lace Cookies need to be crispy for them to taste right.  Do not under bake these cookies to try to keep them soft.  They need their full time in the oven 

What kind of rolled oats do I use for these Lace Cookies? 

I used old fashioned rolled oats for these Lace Cookies.  If you only have quick cooking oats on hand they are okay to use.  If you are using quick cook oats it will slightly change the texture of your cookie but they will still be delicious.  I do not recommend using steel cut oats in this recipe.  Steel cut oats are too thick and will not work well in this recipe. 

Want to take these cookies up another notch? Spread a thin layer on top on the bottom of one of the Lace Cookies and then top with another cookie to make a nutella cookie sandwich!  I promise the combination is decedent.

Ingredients

  • 1 ⅓ C unsalted butter
  • 3 C rolled oats
  • 1 ½ C firmly packed dark brown sugar
  • 1 ½ C granulated white sugar
  • 6 tablespoon all-purpose flour
  • Pinch of salt
  • 2 large eggs beaten
  • 2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F.
  • Melt butter in a small saucepan over low heat; set aside to cool.
  • In a large bowl, combine the oats, brown sugar, granulated sugar ,flour, and salt.
  • Add the melted butter, eggs, and vanilla; mix until blended thoroughly.
  • On four clean sheet pans covered in parchment paper or silicone mats,
  • drop rounded tablespoons of batter about 2 inches away from each other.
  • You should have 8-10 mounds on each pan.
  • Bake for about 8-10 minutes, or until the cookies have spread flat and are a deep golden-brown color.
  • Remove from the oven and cool completely on the pan.
  • Using an offset spatula, gently remove each cookie and place on a serving tray.
  • Keep doing this until no dough is left.
  • Let cool and harden completely.
  • Enjoy!!!

Notes

These cookies should be thin and crispy.  You should be able to almost see through them.
