I loved when the weather would turn cold and we would find ourselves off to my grandmothers house.  She would always have a hot pot of this hamburger soup simmering on the stove. It was my grandfather’s favorite soup.   

I wanted to recreate this recipe to make it for family but I wanted to make it in my Instant Pot because it’s become my new best friend.  I am making everything that I can in my Instant Pot. I mean if I have it, I might as well use it right? 

Do I have to use grass fed beef?

You do not have to use grass fed beef if you prefer conventional beef.  My family prefers conventional beef that I purchase from local suppliers.  The best part of this recipe is that it is very flexible and you can use whatever your family prefers. 

Do I have to use hot house tomatoes? 

You do not have to use hot house tomatoes.  You can use roma tomatoes or any other tomato that you happen to have in your house.  I’ve even been known to use a can of diced tomatoes if I happened to be out of fresh tomatoes. 

Can I make this recipe on the stove or in my slow cooker? 

You can make this soup in your crockpot or on the stove.  If you want to make it in your crockpot saute your beef and onions in olive oil until they are done.  Then add all your ingredients to your slow cooker and allow them cook on low for four to six hours.   

If you would like to cook this recipe on your stove.  Use a stock pot and saute your beef and onions in olive oil until cooked drain and then add the rest of the ingredients to your pot and allow to simmer for about 45 minutes until the potatoes are completely cooked. 

Can I make this without potatoes? 

Yes! The best part of this recipe is how versatile it is.  If you don’t have potatoes, or don’t want to spend the time peeling them.  Trust me I can understand. You can leave them out all together. Or you can replace them with elbow noodles.  We love using elbow noodles in our soup. However, my grandmother always added potatoes to hers.

 

How can I spice this recipe up some?

I made this recipe as an exact carbon copy of my grandmothers.   She was not a spice lover. She liked to keep her flavors simple.  If your family loves spicy soups, you can add in some red pepper flakes, a small can of diced green chilies.  Whichever heat your family prefers.

Equipment

  • Pressure Cooker/Instant Pot

Ingredients

  • 1 lb grass fed beef; 93/7
  • ½ cup mixed vegetables frozen
  • 2 red potatoes peeled and diced
  • 2 hot house tomatoes diced
  • 32 oz beef broth
  • 2 bay leaves
  • 1 tablespoon garlic minced
  • ¾ cup yellow onion diced
  • 1 tablespoon olive oil
  • 2 teaspoon salt
  • 2 tsp pepper

Instructions

  • Set instant pot to saute mode. Add in 1 tablespoon olive oil. Add in onions and garlic saute for about 1 minute. Add in ground beef and cook until browned.
  • Add in salt and pepper. Stir well. Add in potatoes and tomatoes. Stir well.
  • Turn off saute mode. Pour in beef broth. Add two bay leaves.
  • Place lid on the instant pot and set to sealed position. Click pressure cook or manual button. Set timer to 8 minutes. Once the instant pot stops counting and beeps; release the pressure.
  • The pot will move to keep warm. Add in vegetables and stir well. Wait about two minutes and they will warm up and be ready to eat.

Notes

This recipe is very flexible.  You can sub the grass fed beef for conventional, and you can also sub the fresh tomatoes for canned if you wish.
