This Slow Cooker Chicken and Wild Rice Soup is a must have in our home!
- 1 large onion diced
- 1 tablespoon garlic minced
- 1 cup carrots diced
- 2 cups celery diced
- 1 Rotisserie Chicken removed from the bone and shredded
- 4 cups chicken stock
- 2 cups water
- 1 box of long grain wild rice
- 2 teaspoon Italian Seasoning
- 2 bay leaves
- 2 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon cayenne pepper
- 1 tablespoon lemon juice
- 28 oz artichoke hearts 2- 14 oz cans drained
- In a slow cooker add all of your ingredients except the rice to the slow cooker
- Turn your slow cooker on high.
- Cook on high for 3 hours.
- Add the long grain rice and seasoning packet.
- Cook for 1 more hour. Or until the rice is tender.
