Itโ€™s cheesy, toasty, bacony goodness all in one skillet. Weโ€™ve made this a few times now, and I gotta tell ya, it’s quickly become my new favorite.

Ingredients

  • 8 slices bread
  • 8 slices bacon cooked
  • 6 tablespoons salted butter room temperature divided
  • 4 large eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • 8 slices cheese cheddar or your preferred type

Instructions

  • In a bowl, whisk the eggs with the milk, salt, and pepper.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Add the eggs, scrambling with a spatula until they are fully cooked. Set aside.
  • On one side of the bread, place a slice of cheese, followed by ยผ of the scrambled eggs, two slices of bacon, and another slice of cheese. Top with another slice of bread.
  • Butter the outward facing pieces of bread with the butter.
  • Place a griddle over medium heat. When the griddle is hot, put the sandwiches onto the griddle and allow to cook for 1 to 2 minutes or until the first side is brown.
  • Flip the sandwiches and tent with aluminum foil, reducing the heat to medium low. Cook until the second side is brown and the cheese is melted.
  • Cut the sandwiches in half and serve immediately.
