large skillet or griddle
- 8 slices bread
- 8 slices bacon cooked
- 6 tablespoons salted butter room temperature divided
- 4 large eggs
- 1 tablespoon milk
- Salt and pepper to taste
- 8 slices cheese cheddar or your preferred type
In a bowl, whisk the eggs with the milk, salt, and pepper.
In a skillet over medium heat, melt 1 tablespoon of butter. Add the eggs, scrambling with a spatula until they are fully cooked. Set aside.
On one side of the bread, place a slice of cheese, followed by ¼ of the scrambled eggs, two slices of bacon, and another slice of cheese. Top with another slice of bread.
Butter the outward facing pieces of bread with the butter.
Place a griddle over medium heat. When the griddle is hot, put the sandwiches onto the griddle and allow to cook for 1 to 2 minutes or until the first side is brown.
Flip the sandwiches and tent with aluminum foil, reducing the heat to medium low. Cook until the second side is brown and the cheese is melted.
