As I’m making a recipe, I always enjoy pausing to think about the ingredients. It’s amazing how each ingredient adds to the deliciousness of each dessert. Without specific ingredients in these muffins, they wouldn’t turn out to be so delicious. Let’s go over some of these ingredients, so we can all see what they can bring to the table.

Pistachios – While I love pistachios, some people may think that they’re not great in muffins. Boy, are they missing out!  When you consume pistachios, you are getting so much goodness in your body. You’re getting access to healthy fats and fiber and that’s just the beginning. Let’s not forget to mention that the flavor really hits the spot in these muffins. 

Cocoa powder – One of my favorite ingredients ever to add to my baked goods is cocoa powder. It brings a lot of good stuff to these muffins. Believe it or not but cocoa powder can help to eliminate inflammation in your body. It can also help you with weight control and brain health. 

Maple syrup – Not only does maple syrup bring a lot of flavor to these muffins, but it also has a lot of nutrients. It may be high in sugar, but it also brings so much to the table. One of my favorite qualities of maple syrup is it does contain some nutrients and antioxidants, but it’s also natural! It’s such a great alternative to using pure sugar. 

Now that you know the power of some of these ingredients, you don’t want to miss out on making these muffins. 

How to Store Muffins

After you have spent all that time making these muffins, you don’t want them to go to waste. These delicious Double Chocolate Chip Pistachio Muffins can be stored on the counter for up to 3 days. Keep in mind that they need to be in an airtight container during those three days.

You can use an airtight container to store them in or you can use plastic wrap. Whatever you do, just make sure no air is going to get into them. If you’d like to make a batch and store it for later, you can freeze these muffins for up to three months.

Ingredients

  • 2 cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup white granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • ½ cup buttermilk
  • ¾ cup vegetable oil
  • ½ cup melted butter
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup
  • 1 cup semi-sweet chocolate chips
  • ¾ cup shelled pistachios chopped

Instructions

  • Preheat the oven to 350 F. Grease or line a 12-cup muffin pan.
  •   In a separate bowl whisk together the oil, egg, sugars, buttermilk, butter, maple syrup and vanilla.
  •   Add the wet ingredients into the dry ingredients and mix until just combined
  • Add the wet ingredients into the dry ingredients and mix until just combined.
  • Divide the batter equally into the muffins tin. Sprinkle the remainder of the chocolate chips and pistachios.
  • Sprinkle the remainder of the chocolate chips and pistachios.
  • Bake for 16-18 minutes, until a toothpick inserted comes out clean.
  • Cool on wire rack before serving.

Notes

If you do not like pistachios you can leave them out of this recipe.
