Saute the garlic in the olive oil in a skillet or saute pan until fragrant.

Add the milk, cottage cheese, cornstarch, salt, and pepper to a food processor. Plus on high until the sauce is smooth. Add the garlic and pulse to combine.

Add the sauce back to the saute pan, and warm over low heat for 2-3 minutes. Once the sauce starts to thicken remove from heat.

 Cook the pasta according to package instructions in a large pot of water and drain. Then toss the cooked pasta into the sauce, and garnish with a sprinkle of parmesan cheese and fresh parsley. 

Hint: Make sure that you allow the sauteed garlic to cool before you add it to the homemade alfredo sauce, as you don’t want your sauce to curdle.

Storage

Storage – Store leftover cottage cheese alfredo in an airtight container in the fridge for 2-3 days.  

Freezing –  This alfredo sauce can also be frozen for up to 3 months. Simply thaw in the fridge overnight before using. 

Reheating – To reheat, simply warm the alfredo sauce in a pot over low heat, stirring occasionally until heated through.

Wendy’s Test Kitchen Tips

  • If your pasta sauce thickens more than you like, add some hot water or milk to thin it back out. I like to use leftover pasta water. 
  • Don’t have a food processor? You can use a high-speed blender instead. 
  • If you are using garlic powder there is no need to saute the garlic, so you can skip this step and just add the powder into the food processor with the remaining ingredients.

Since you are going to blend this into a smooth sauce you can use small curd or large curd cottage cheese. Good Culture is my favorite brand. 

Can I add a vegetable to this creamy pasta sauce?

Yes, fresh spinach wilted down in the sauce adds a nice pop of color to this tasty recipe. 

How do I thin leftover alfredo sauce? 

If your sauce thickens in the fridge, you can add a splash of milk, heavy cream, or even water to help thin it back out and give it that velvety texture of fresh sauce.

Equipment

  • large skillet

Ingredients

  • 1 cup milk
  • ¾ cup cottage cheese
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • ¼ teaspoon fresh black pepper
  • 4 garlic cloves
  • ½ cup grated parmesan cheese
  • Fresh basil for garnish
  • ½ tablespoon Olive oil
  • 8 ounces pasta pappardelle shown

Instructions

  • In a large saute pan, place about half tablespoon of olive oil and over low/medium heat add the sliced garlic and cook for about 30 seconds to a minute, watching carefully to prevent burning.
  • Remove from heat and allow to cool slightly.
  • In a food processor (or blender) place the milk, cottage cheese, cornstarch, salt and pepper and pulse on high to combine and puree the cottage cheese.
  • Add in the cooled garlic and pulse to combine. Pour the sauce back into the saute pan, and stirring frequently cook for 2-3 minutes over low heat until the sauce begins to thicken.
  • Remove from heat.
  • Cook pasta according to the directions, drain and add to the saucepan, tossing to coat the pasta.
  • Garnish with freshly grated parmesan and freshly chopped basil.
