Step 1: Heat olive oil in a large skillet or pot over medium heat. Add the chicken and cook until browned and cooked through. Remove chicken and set aside.
Step 2: In the same pot, sautรฉ the onion until softened. Add garlic and cook
Step 3: Stir in diced tomatoes, tomato sauce, paprika, oregano, salt, and black pepper. Bring the mixture to a simmer.
Step 4: Add the chicken back to the pot along with the elbow macaroni and chicken broth. Stir to combine and bring to a boil.
Step 5: Lower the heat, cover, and simmer until the macaroni is cooked and the sauce thickens and add cheese until melted.
Step 6: Garnish with parsley and serve warm.
Storage
Storing – Store leftovers in an airtight container in the fridge for up to three days.
Freezing – You can also freeze the leftovers for up to three months. Just keep in mind that the pasta will change textures and be on the mushy side when thawed.
Reheating – You can reheat single servings in the microwave for 1-2 minutes or reheat the entire batch in a skillet over medium heat on the stove. Add a splash of chicken broth or water to help thin it out.
