Building the Cupcakes
Step 1: Pipe green frosting around the cupcakes
Using the green frosting, pipe a ring of dollops around the edge of the cupcake to create ‘grass’.
Step 2: Pipe chocolate frosting onto the cupcakes
Using the chocolate frosting, pipe a thick dollop of frosting in the center of the grass for the ‘dirt mound’.

Place the two eggs cut in half in the center of the chocolate frosting.
Hint: Fill the liners 3/4 the way full. This is about 1/4 cup of cake batter.

🥫 Storage
If you are not going to serve these Easter cupcakes right away, you will need to store them in the refrigerator. Make sure to place them in an airtight container so that they do not dry out. They will be good for up to three days.
You can freeze the cupcakes, but I recommend doing so without the frosting. Thaw them overnight on the counter. Make sure they reach room temperature before you frosting them.
💭 Tips
- Be careful not to overcook the cupcakes, as they will dry out and be less flavorful. I’ve over baked several cupcakes in my day and they taste way better when they aren’t overcooked.
- It’s important that you do not overmix the batter for this recipe. Once you add the flour you will want to mix until it is just combined. Overmixing can result in tough cupcakes.
- I used the mini eggs in the egg carton, you can buy them them in creme eggs or caramel eggs. I like the caramel eggs best, but you can use creme eggs also. you could also use the chocolate filled mini eggs if you prefer those.
- Make sure that the frosting ingredients are room temperature before you start to mix them together. Room temperature butter will give you a smooth frosting.
