In a bowl mash the avocado until more, then add in the lemon juice and salt and black pepper. Mix until combined.

Top the toast with a thick smear of avocado, then fresh tomato slices, and a drizzle of oil. Garnish as desired.

Tips

  • You can tell the avocadoes are ripe and ready to use when they are slightly soft to the touch. The skin should also be dark in color and there shouldn’t be any visible bruises or dents.
  • Use tomatoes that are bright red, plump, and have a slight give when gently squeezed. Avoid any with bruises or soft spots.

Ingredients

  • 2 ripe avocados
  • 2 slices whole-grain bread
  • 1 medium tomato thinly sliced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Optional: red pepper flakes fresh basil, or chopped cilantro for garnish

Instructions

  • Toast the bread slices until golden brown.
  • While the bread is toasting, halve the avocados, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth, then mix in the lemon juice, salt, and pepper.
  • Spread the mashed avocado evenly onto each slice of toasted bread.
  • Arrange the tomato slices on top of the avocado spread.
  • Drizzle a small amount of olive oil over the tomatoes, and add additional salt and pepper if desired.
  • Garnish with red pepper flakes, fresh basil, or chopped cilantro if using.
  • Serve immediately.
