Instructions
Toast the bread slices until golden brown.
While the bread is toasting, halve the avocados, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork until smooth, then mix in the lemon juice, salt, and pepper.
Spread the mashed avocado evenly onto each slice of toasted bread.
Arrange the tomato slices on top of the avocado spread.
Drizzle a small amount of olive oil over the tomatoes, and add additional salt and pepper if desired.
Garnish with red pepper flakes, fresh basil, or chopped cilantro if using.
