Spicy Thai Lo Mein is the perfect weeknight dinner.  Full of spicy flavor, soft egg noodles and veggies make for a dinner in under 15 minutes! 

Our family has always loved takeout.  Lo mein is a staple when we order from our favorite local restaurant.  I wanted to recreate this dish at home to make it a little healthier and a lot more budget friendly.   You can have this lo mein done and on the table long before your favorite takeout restaurant could deliver to you! 

What is Spicy Thai Lo Mein? 

Spicy Thai Lo Mein is a spicy meat and noodle dish that is savory in flavor.  You will typically find this dish contains a few vegetables like broccoli, carrots and peppers.  I like that this dish has everything for a well balanced meal.  You can find protein, carbs and veggies. What more could you want in a simple dinner recipe?  This recipe does contain peanut butter as a warning incase you have a peanut allergy.  

Can I make this dish less spicy? 

Yes!  One of the best things about making this Spicy Thai Lo Mein at home instead of ordering takeout is that you control what goes in.  You can decide how much spice to give this dish.  To control the spice you will want to lower the amount of cayenne pepper.  I would also recommend that you lower the amount of Sriracha that you put into the sauce to help reduce the heat.  I’m not a big spicy food fan so I always reduce the heat level for myself and keep it the same for my husband who loves spicy foods. 

What if I don’t want to use peanut butter? 

Peanut Butter is really important for the flavor of this Spicy Thai Lo Mein.  If you have a peanut allergy or you just don’t like peanut butter you can use almond butter or sun butter.  Don’t worry this sauce does not taste like eating a spoonful of peanut butter.   It does have a slight peanut flavor.   I do not recommend leaving the peanut butter out all together if the peanut butter really does make or break the flavor of the sauce. 

Where do I buy the noodles for this Spicy Thai Lo Mein? 

To make Spicy Thai Lo Mein you will need lo mein noodles. Lo mein noodles are  chinese egg noodles.   They are usually soft and tossed in a sauce.  Chow Mein noodles are also usually chinese egg noodles however they are typically fried and a little crispier than lo mein.  Keep that in mind while you are cooking your dish.  You want a soft noodle to make this lo mein dinner.

Spicy Thai Lo Mein

Equipment

  • Instant Pot/Pressure Cooker

Ingredients

  • 1 tbsp. Oil
  • 2 tsp. Garlic powder
  • 1 tsp. Cayenne
  • 1 tsp. Salt
  • 1 tsp. Black pepper
  • 1 tbsp. Minced garlic
  • 2 Red peppers thinly sliced
  • 1 cup diced fresh broccoli
  • 1 large Carrot sliced
  • ¼ cup Green onions
  • 1 pound Boneless skinless chicken tenders
  • 12 oz Lo mein noodles
  • Fresh chopped cilantro

Sauce

  • cup Soy Sauce
  • 2 tbsp. Rice wine vinegar
  • 1 Lime juiced
  • 1 tbsp. Sriracha
  • 1 tbsp. Peanut Butter creamy
  • ¼ cup Chicken broth

Instructions

  • In a medium bowl, combine rice wine vinegar, Sriracha sauce, lime
  • juice, peanut butter, chicken broth, and soy sauce.
  • Stir with a whisk until well blended and set aside.
  • Select the ‘Saute’ function and pre-heat the Instant Pot.
  • Add oil to the inner pot and saute the bell peppers, broccoli, minced
  • garlic, and carrots until tender-crisp.
  • Remove the mixture and set to the side.
  • Add more oil as needed.
  • Add the diced chicken and saute until almost done.
  • Press ‘Cancel’ to turn Instant Pot off.
  • Add in the pepper mixture, and sauce, stir to combine.
  • Close the lid and pressure cook for 2 minutes.
  • Do a 2 minute natural pressure release (NPR 2).
  • Prepare your noodles as directed on the box.
  • Press 'Cancel', open the lid and add the noodles, stir the noodles to combine.
  • Garnish with fresh cilantro.

Notes

  1. You can use almond butter or sun butter in place of peanut butter if you have allergies.
  2. If you do not have chicken tenders you can slice up a chicken breast or chicken thighs.
