Who is ready for a change of pace in the kitchen? All the fancy gadgets for cooking are nice, but I really want to take it back old school with my slow cooker. This Slow Cooker Chicken and Wild Rice Soup is everything you could want in a dinner and more. Get out the slow cooker and get this meal on the menu. Wild rice is a favorite ingredient in soup for me, it’s just super tasty and easy to make. I used to be scared to make wild rice and now I’m just like “bring it on.”

When I have a lot of people coming over, I almost always make soup. Soups are super filling and can feed a crowd. Plus, for some reason, the leftovers last for days. I’ll sometimes make this in the winter and we will eat it for a while. It’s really nice to cook once and then it will feed everyone for a few days. Slow Cooker Chicken and Wild Rice Soup is a hit that the whole family will enjoy, even those picky eaters.

Soup is also great for enjoying bread. Anytime I spend the time making homemade bread, you better believe I’m making a delicious soup like this to enjoy with the bread. This is also a great soup to make in the slow cooker because you can put it together and then forget about it. I think the crockpot or slow cooker is one of those kitchen staples that we all enjoy having around. It sure does make cooking a lot easier.

How to Store Leftover Chicken and Wild Rice Soup

After you’ve made this amazing recipe, you surely don’t want it to go to waste. Grab an airtight container or two and place it in the fridge. It’ll last 2-3 days in the fridge before starting to smell a little funky. Can you freeze Chicken and Wild Rice Soup? Yes, you can! Storing this leftover soup in the fridge or the freezer will be a good idea because it’ll quickly become a family favorite.

What Goes Good With Chicken and Wild Rice Soup?

Let’s say that you’re making this recipe tonight and you need to know what goes with it. Well, there are lots of options for enjoying this soup. You can easily serve this recipe on its own, but a bunch of fresh bread never hurts. Like I mentioned before, there is just something to be said about fresh bread and soup together. Oh, and let’s not forget about a nice green salad to go with it! The littles may not like the salad but it’ll still be something to offer that tastes yummy with soup. Besides soup and salad seem to go great together.

Is it better to put a slow cooker on low or on high?

It depends on how fast you want something cooked. If you want your soup to cook faster, you’ll want to put it on high. If you are looking to cook your soup all day, then put it on low. Most people are gone from their house all day, which means they put it on low and the soup cooks all day long in the slow cooker.

Slow Cooker Chicken wild rice soup

Ingredients

  • 1 large onion diced
  • 1 tablespoon garlic minced
  • 1 cup carrots diced
  • 2 cups celery diced
  • 1 Rotisserie Chicken removed from the bone and shredded
  • 4 cups chicken stock
  • 2 cups water
  • 1 box of long grain wild rice
  • 2 teaspoon Italian Seasoning
  • 2 bay leaves
  • 2 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 28 oz   artichoke hearts 2- 14 oz cans drained

Instructions

  • In a slow cooker add all of your ingredients except the rice to the slow cooker
  • Turn your slow cooker on high.
  • Cook on high for 3 hours.
  • Add the long grain rice  and seasoning packet.
  • Cook for 1 more hour. Or until the rice is tender.

Notes

Be sure to not allow the rice to cook too long, as it will soak up all your liquid.  Cook rice until it is just tender.   If you are reheating and the liquid has been soaked up just add more water when reheating.
