WHAT YOU’LL NEED

Oil – I used olive oil, but you can use canola or vegetable oil 

Eggs – Large brown or white.  I used white eggs

Red Velvet Cake Mix – Any brand.  I prefer Betty Crocker

Sugar – powdered or confectioners sugar.

STEP BY STEP INSTRUCTIONS

Step 1. Preheat the oven to 350. 

Step 2. In a medium bowl, stir together the olive oil and eggs until well blended. 

Step 3. Add the cake mix and stir until the dough comes together.

Step 4. Using a tablespoon, scoop the dough into one inch balls. 

Step 5. Roll each of the balls in your hand then into the powdered sugar. 

Step 6. Place on a parchment paper lined baking sheet. 

Step 7. Bake for 7 minutes, or until they are very lightly browned around the edges and the tops look dry. 

Step 8. Let cool on the pan for 5-10 minutes before moving to a cooling rack to cool completely so they don’t fall apart. These render soft cookies. 

TIPS AND FAQS

Store your leftover cookies in an airtight container for up to 5 days.    I do not recommend refrigerating the cookies as they will dry out.  

You can freeze these cookies for up to five months.   They can be frozen baked or just the cookie dough.  I prefer to freeze the dough for best results.   Once you shape your cookies into ball shapes then you can freeze the dough in a freezer bag.  Do not roll them in powdered sugar before freezing.   Allow frozen cookie dough to thaw overnight in the fridge and then bake as directed. 

Want to make these more festive for the holidays?   Find a green velvet cake mix at your local grocery store, double the recipe making a batch of red velvet and a batch of green velvet and prepare both doughs.  Once the dough is complete roll some of each color into a ball and bake like the recipes.  Then you have some beautiful red and green festive cookies. 

These Red Velvet Crinkle Cookies are easy to change up.  Try using a brownie mix instead of red velvet to make brownie crinkle cookies.  They are delicious as brownie cookies.
