WHAT YOU’LL NEED FOR PEPPERMINT STUFFED COOKIES

Chocolate Cake Mix-  Any brand that you prefer.  I prefer Betty Crocker Triple Chocolate cake mix but you can use any type of chocolate cake mix that you have on hand.  

Eggs = Large eggs, white or brown eggs. 

Oil – Canola, vegetable, or melted coconut oil. 

Peppermint Patties –  Any brand that you like to use.  I used York Peppermint patties as they are a family favorite in our household. 

Chocolate – Andes Thin mints bits. 

STEP BY STEP INSTRUCTIONS

Step 1. Preheat the oven to 350 degrees. 

Step 2. Line two baking sheets with parchment paper or silicone baking mats.

Step 3. Combine the chocolate cake mix, eggs and oil together until completely combined.

Step 4. Portion the dough into 1-Tablespoon sized scoops.

Step 5. Flatten each scoop and place a peppermint patty in the center. Fold the cookie dough around the patty so that it is completely enclosed. 

Step 6. Place the cookie dough on the prepared baking sheet and press 1 teaspoon of Thin Mint bits on top.

Step 7. Bake for 8-10 minutes.

TIPS AND FAQS FOR PEPPERMINT STUFFED COOKIES

I used chocolate cake mix for this recipe because I think chocolate and peppermint go so well together.  However, you could also use any type of cake mix that you have on hand.   Vanilla or butter would work as well. 

Your cookie dough should be thicker than a cake batter so that you can shape them into cookies.   

I used York Peppermint patties for my peppermint patties.  They are our family’s preferred type of chocolate.  You can use any brand that you prefer, or store brand if you would like.   

If you cannot find thin mint bits on the baking aisle of your local store near the chocolate chips, you can purchase some andes mints and chop them up into smaller pieces.    

Instead of thin mint bites if you want to change to a different type of chocolate, you could use chocolate chips, chocolate chips.  I would use mini chocolate chips.   Though it will take away some of the mint flavor. 

Store your Peppermint Stuffed Cookies on the counter away from heat for up to 5 days.  Make sure that you do not refrigerate your cookies.

You want to cake mix to dough like and not a thin batter like you use for a cake,
