Instant Pot Spanish Rice

Instant Pot Spanish Rice

WHAT YOU’LL NEED

Oil – Olive or canola 

Onion – Yellow or white.  I used a sweet onion. 

Rice – Long grain white rice. 

Garlic – fresh cloves minced, or minced. 

Tomatoes – fresh tomatoes minced.  Or Rotel would work. 

Stock – Chicken stock or broth.  Or bouillon. 

Seasonings and Spices – Cumin, Chili powder, and chopped fresh cilantro. 

STEP BY STEP INSTRUCTIONS

Step 1. Turn the Instant Pot to saute mode. Once the pot gets hot, add the oil, and onions. Cook the onions for about 4 minutes until they become soft.

Step 2. Add in the garlic and cook with the onions in the pot for about 2 minutes.

Step 3. Add in the rice and mix well to incorporate the onion and garlic to each grain. Allow the rice to brown for about 5 minutes.

Step 4. Add the stock, diced tomatoes, cumin, and chili powder to the Instant Pot. Stir well.

Step 5. Scrape the bottom of the pot to remove any food that has stuck to the bottom of the pot. Press the cancel button.

Step 6. Close the Instant Pot by twisting on the lid. Close the valve, and set the Instant Pot to High Pressure for 8 minutes.

Step 7. After it has cooked for 8 minutes, release pressure manually.

Step 8. Stir and fluff the rice. Plate on a dish or in a bowl alongside your favorite dish, or by itself. Garnish with cilantro.

TIPS AND FAQS

If your family is a fan of spicy foods, you can turn up the heat on this Instant Pot Spanish Rice by adding in some diced jalapenos, or a can of diced green chilies.  I prefer the flavors of the green chilies in this dish.  It makes for the perfect slight heat. 

If you want to make brown rice for this dish instead of long grain white rice, I recommend cooking at high pressure for 15 minutes instead of 8.  Brown rice tends to take a little longer to cook than white rice.  

Reheat leftovers on the stove in a saucepan on medium heat for a fresh taste.  If leftovers are a little dry, add about a teaspoon of water to give more moisture.  You can also reheat your leftovers in the microwave if you are in a hurry.
