Instructions

Place ingredients into the bread machine in the order listed or according to your manufacturer’s instructions.

Program the bread machine using the dough setting.

After the initial mix, check and add flour or water if needed.

When the dough cycle has completed, punch down the dough and transfer it to a lightly floured surface.

Divide the dough into 24 equal pieces and shape it into a ball.

Place the rolls on a large baking sheet lined with parchment paper. Cover, place in a warm, draft-free location, and allow to rise until doubled in size, about 1 hour.

Meanwhile, preheat the oven to 400 degrees.

Bake the rolls for 8 to 10 minutes or until lightly browned.

Equipment

Ingredients

  • ½ cup warm water 70 to 80 degrees
  • 1 egg room temperature
  • 3 tablespoons butter softened
  • 1 large sweet potato cooked, peeled and mashed (about ¾ cup)
  • 4 cups all purpose flour
  • 3 tablespoons sugar
  • 1 ½ teaspoons salt
  • 4 ½ teaspoons active dry yeast this is equal to two small packets of active yeast

Notes

  • If you want to make these rolls ahead of time, you can easily freeze them. Just place them on a baking sheet lined with parchment paper and place them in the freezer. Once they are frozen, you can store them in a Ziploc bag. When you are ready to bake them, just let them thaw out and then bake according to the recipe instructions.
  • Be sure to cover the rolls while they rise, I like to use a floursack towel. If you are a plastic wrap, I recommend spraying the side that will touch the rolls with cooking spray so that the dough doesn’t stick.
Store these rolls in an airtight container for up three days. Reheat in the microwave at 50% for 20 to 30 seconds or in the oven at 350 degrees for five to eight minutes.
