This Grilled Cheese Egg and Bacon Sandwich is what happens when breakfast and lunch fall in love and make the most mouthwatering little grilled sandwich, baby. It’s cheesy, toasty, bacony goodness all in one skillet. We’ve made this a few times now, and I gotta tell ya, it’s quickly become my new favorite.

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Pour in the eggs and stir with a spatula until they’re scrambled and cooked through. Set aside.

Ingredients

  • 8 slices bread
  • 8 slices bacon cooked
  • 6 tablespoons salted butter room temperature divided
  • 4 large eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • 8 slices cheese cheddar or your preferred type

Instructions

  • In a bowl, whisk the eggs with the milk, salt, and pepper.
  • In a skillet over medium heat, melt 1 tablespoon of butter. Add the eggs, scrambling with a spatula until they are fully cooked. Set aside.
  • On one side of the bread, place a slice of cheese, followed by ¼ of the scrambled eggs, two slices of bacon, and another slice of cheese. Top with another slice of bread.
  • Butter the outward facing pieces of bread with the butter.
  • Place a griddle over medium heat. When the griddle is hot, put the sandwiches onto the griddle and allow to cook for 1 to 2 minutes or until the first side is brown.
  • Flip the sandwiches and tent with aluminum foil, reducing the heat to medium low. Cook until the second side is brown and the cheese is melted.
  • Cut the sandwiches in half and serve immediately.
