  • cast iron skillet or large skillet
  • Wooden Spoon

Ingredients

  • 16 ounces -ground mild Italian sausage
  • 2 teaspoons minced garlic
  • 24 ounces marinara sauce
  • 2 cups chicken broth
  • 18 ounces frozen cheese tortellini
  • 4 cups baby spinach
  • 1 cup shaved Parmesan cheese

Instructions

  • In a large skillet over medium-high heat, cook the sausage, crumbling as it browns. Drain if needed.
  • To the skillet, add the garlic and stir until mixed into the sausage.
  • Pour the marinara sauce and chicken broth into the skillet. Bring the sauce to a boil. Then, add the tortellini to the skillet.
  • When the skillet returns to a boil, reduce the heat to medium. Cover the skillet and cook for 8 to 10 minutes before removing the lid and allowing to cook until the tortellini is heated through and the sauce has thickened to your desired consistency.
  • Remove the skillet from the heat. Stir the spinach into the tortellini.
  • Prior to serving, sprinkle the top of the pasta with the shaved Parmesan.

Notes

  • Use high-quality sausage: Invest in good quality sausage, whether it's Italian sausage, chicken sausage, or any other variety you prefer. The quality of the sausage will greatly impact the overall flavor of the dish.
  • Don't overcook the tortellini: Tortellini cooks quickly, so be mindful not to overcook it. Follow the package instructions and cook the tortellini until al dente, ensuring it maintains its shape and texture.
  • Season at each step: Seasoning is key to enhancing the flavors of the dish. Season the sausage as you sear it, season the vegetables as they cook, and taste the sauce before serving to adjust the seasoning if needed.
