Ingredients

Chocolate Cupcake Ingredients

  • 1 cup all purpose flour
  • ½ cup cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup light brown sugar
  • ½ cup sugar
  • cup canola oil
  • ½ cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract

Vanilla Frosting

  • 1 cup unsalted sweet cream butter softened
  • 3 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 4 tablespoon heavy whipping cream
  • Leaf Green gel food coloring

Chocolate Frosting

  • 1 cup unsalted sweet cream butter softened
  • 2 ½ cups powdered sugar
  • ½ cup cocoa powder
  • 1 teaspoon pure vanilla extract
  • 4 tablespoon heavy whipping cream
  • 18 Cadbury mini eggs cut in half

Instructions

Chocolate Cupcake Directions

  • Preheat the oven to 350 degrees and line the cupcake pan with cupcake liners
  • Using a standing mixer, beat the brown sugar, sugar, canola oil, egg, and vanilla until combined
  • Using a large bowl, whisk the flour, cocoa, baking powder, baking soda and salt
  • Alternate between the buttermilk and flour until combined and smooth
  • Fill the cupcake liners about ¾ way full
  • Bake in the oven for 21 minutes or until the top bounces back
  • Allow to cool completely

Vanilla Frosting Directions

  • Using a standing mixer, beat the butter, powdered sugar, vanilla and whipping cream until combined, smooth and fluffy. Traditionally this will take about 5-7 minutes to whip
  • Beat in a few drops of the green gel food coloring
  • Scoop the frosting into the piping bag

Chocolate Frosting Directions

  • Using the same standing mixer, beat the butter, powdered sugar, cocoa powder, vanilla, heavy whipping cream until combined, smooth and holds a peak
  • Scoop into the piping bag

Building the Cupcakes

  • Using the green frosting, pipe a ring of dollops around the edge of the cupcake to create ‘grass’
  • Using the chocolate frosting, pipe a thick dollop of frosting in the center of the grass for the ‘dirt mound’
  • Place the two eggs cut in half in the center of the chocolate frosting
