Chocolate Cupcake Ingredients
- 1 cup all purpose flour
- ½ cup cocoa powder
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup light brown sugar
- ½ cup sugar
- ⅓ cup canola oil
- ½ cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
Vanilla Frosting
- 1 cup unsalted sweet cream butter softened
- 3 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 4 tablespoon heavy whipping cream
- Leaf Green gel food coloring
Chocolate Frosting
- 1 cup unsalted sweet cream butter softened
- 2 ½ cups powdered sugar
- ½ cup cocoa powder
- 1 teaspoon pure vanilla extract
- 4 tablespoon heavy whipping cream
- 18 Cadbury mini eggs cut in half
Chocolate Cupcake Directions
Preheat the oven to 350 degrees and line the cupcake pan with cupcake liners
Using a standing mixer, beat the brown sugar, sugar, canola oil, egg, and vanilla until combined
Using a large bowl, whisk the flour, cocoa, baking powder, baking soda and salt
Alternate between the buttermilk and flour until combined and smooth
Fill the cupcake liners about ¾ way full
Bake in the oven for 21 minutes or until the top bounces back
Allow to cool completely
Vanilla Frosting Directions
Using a standing mixer, beat the butter, powdered sugar, vanilla and whipping cream until combined, smooth and fluffy. Traditionally this will take about 5-7 minutes to whip
Beat in a few drops of the green gel food coloring
Scoop the frosting into the piping bag
Chocolate Frosting Directions
Using the same standing mixer, beat the butter, powdered sugar, cocoa powder, vanilla, heavy whipping cream until combined, smooth and holds a peak
Scoop into the piping bag
Building the Cupcakes
Using the green frosting, pipe a ring of dollops around the edge of the cupcake to create ‘grass’
Using the chocolate frosting, pipe a thick dollop of frosting in the center of the grass for the ‘dirt mound’
Place the two eggs cut in half in the center of the chocolate frosting
