M&M Rice Krispie Treats

- 6 cups crispy rice cereal pictured with cocoa crispy rice cereal
- 10 ounces miniature marshmallows
- 3 tablespoons butter
- ½ cup miniature M&Ms divided
Prepare a 13 x 9 baking sheet with wax paper and a spritz of non-stick cooking spray.
Stove top method: Melt butter in a large saucepan over low heat. When the butter is melted, add the marshmallows and melt, stirring constantly. Remove the saucepan from heat.
Microwave method: Place the marshmallows and butter into a microwave-safe bowl. Heat for 1 minute on high in the microwave. Stir the mixture vigorously allowing the residual heat to continue melting the marshmallows. Return to the microwave for an additional 30 seconds if needed.
Fold the cereal into the melted marshmallows. Then, add ¼ cup miniature m&ms.
Using a buttered spatula or greased wax paper evenly press mixture into the prepared baking sheet. Top the treats with the remaining miniature m&ms, pressing gently into the top.Cool completely.
Cut the cereal into 12 treats.
- Don't overcook the marshmallows: When melting the marshmallows and butter, be sure to stir frequently and take them off the heat as soon as they are melted and smooth. Overcooking them can result in tough and chewy treats.
- Use fresh Rice Krispies: Fresh Rice Krispies will yield the best texture in your treats. If your cereal has been sitting in the pantry for a long time, it may be stale and affect the texture of your treats.
- Add the M&Ms last: After mixing in the Rice Krispies, wait a minute or two before stirring in the M&Ms. This will prevent them from melting and losing their color.
- Press them firmly: To avoid ending up with crumbly and falling apart treats, press the mixture firmly and evenly into the pan using a sheet of wax paper or lightly greased hands.
