- 1 pound chicken breasts cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 12 ounces penne pasta cooked
- 1 cup mozzarella cheese shredded
- 2 tablespoons parsley optional
Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
Season the chicken with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken until golden and no longer pink in the center. Remove from the skillet and set aside.
In the same skillet, sauté the minced garlic for 30 seconds, then pour in the chicken broth and heavy cream. Stir in Parmesan, sun-dried tomatoes, thyme, and basil. Simmer for 2-3 minutes until slightly thickened.
Add the cooked pasta and chicken to the sauce, stirring to combine. Transfer the mixture to the prepared baking dish and sprinkle mozzarella cheese evenly over the top.
Bake for 20-25 minutes or until the cheese is melted and bubbly.
Garnish with fresh parsley if desired, and serve warm.
