Thin Mint Cake

My daughter loves Thin Mints.  We always buy several packs and stick them in the freezer each spring.  This year somehow we managed to forget that they were in the freezer and I went to clean out the freezer.  I wanted to make something special with the Thin Mints and I came up with this Thin Mint Poke Cake.  

I don’t know about you, but for us Poke Cakes are pretty high on our list of staple desserts.  We love how the pudding keeps the cake extra moist.  

What is a Thin Mint  Poke Cake?

A poke cake is a cake that is a layer of cake, a layer of filling like pudding and then the frosting on the top of the cake.  The layers really set these cakes apart from other cakes because they keep the inside of the cake very moist.  Just like the name of the cake says, to fill the cake you will want to poke all over the cake before pouring on the frosting.  

What should I use to poke holes in the cake? 

I find that it’s easiest to use the handle of a large wooden spoon to poke the holes in the cake.  For this Thin Mint Poke Cake you will have about ½ inch large holes.  You could also use the handle of a regular spoon and just move the handle a little bit.  I’ve also found that it’s best to poke the holes in the cake while it’s still warm if you are not using a wooden spoon.  In the past I’ve used a butter knife and just cut small circles in the cake to make the holes.  Use the tools that you have on hand and make them work for you. 

I can’t find Thin Mints can I use something else for this Thin Mint Poke Cake?

Have no fear, I have some options for you.  I know that Thin Mint cookies are not available all year long.  So, I’ve come up with a few other cookies to use when you do not have Thin Mints on hand.  Back to Nature makes a similar cookie called Fudge Mints.  Keebler sells Grasshoppers.  Grasshoppers make an easy to find substitute Aldi has a store brand labelled Fudge Mint Cookies.  Walmart also sells their own cookies labelled Fudge Mint Cookies.  You have plenty of options if you are unable to get your hands on Thin Mints. .

Thin Mint Poke Cake

Ingredients

  • 2 boxes of triple chocolate cake mix
  • 2 ½ C whole milk
  • 6 large eggs
  • 1 C canola oil
  • 2 boxes Chocolate Pudding made per directions. Small boxes

Chocolate Ganache Frosting

  • 1 C chocolate chips
  • ½ C heavy whipping cream
  • 8 girl scout thin mint cookies chopped up

Instructions

  • Preheat oven to 350 degrees and spray the 9x13 pan with pam baking spray and set aside
  • Using a standing mixer, beat together all ingredients until combined
  • Pour batter into the 9x13 pan
  • Bake for 35 minutes, use a knife to check if the center comes out clean
  • When cake is baked, set aside to cool off then poke holes through the whole cake
  • Fill the holes with chocolate pudding then refrigerate the cake for 30 minutes
  • Using a small pot, heat up the heavy whipping cream until steaming
  • While heavy whipping cream is heating up, place chocolate chips into a heat-proof bowl
  • Once the heavy whipping cream is heated, pour over the chocolate chips
  • Allow to sit for 1 minute before whisking until smooth
  • Frost the top with the ganache
  • Top with the crushed cookie bits
  • Cut, serve and enjoy!!!

Notes

  1. You will want to prepare the pudding as the package lists.  However, you do not have to chill the pudding.
  2. You can use other Fudge Mint Cookies if you cannot find Girl Scout Cookies
