Celebrating St. Patrick’s Day can be so much fun! And if you’re hoping to enjoy the holiday to the fullest this year, you’re going to need a festive dessert! These simple shamrock cupcakes are the perfect way to enjoy the holiday. On top of the adorable decorations on top of these cute cupcakes, each cupcake also includes a surprise inside.

Making cupcakes is a great way to celebrate – especially when they’re simple to make but still look amazing. This easy recipe for St. Patrick’s Day cupcakes transforms a boxed cake mix into some really cute holiday cupcakes. The secret to transforming cake mix into something special for St. Patrick’s Day is a package of Lucky Charms marshmallows.

In addition to having fun marshmallows in the shape of hearts, stars, and moons, these marshmallows also include shamrocks. And we’re going to be using these shamrocks in two different ways to turn plain vanilla cupcakes into something adorable.

Start by preparing a box of white cake mix according to package instructions. Mix up the batter according to the box, then fill your cupcake liners with cake mix until they’re 2/3 of the way full. After you’ve filled all your cupcake liners, grab your shamrock marshmallows and place one shamrock on top of each cupcake. Push the marshmallow into the batter a little bit, making sure not to cover it with batter.

Bake the cupcakes according to the box. When the time is up, remove them from the oven and allow them to cool completely before decorating.

While the cupcakes are cooling, tint a jar of white frosting with green food coloring. After the cupcakes are cooled, pipe the frosting on top of each cupcake. Then, decorate the cupcake by placing a chocolate coin and shamrock marshmallow on top.  This is my favorite part and your children will love helping out this! Make it fun and get them excited about being in the kitchen.

Whether you don’t have a box of white cake mix on hand or just prefer making your own cake mix, you can easily make these cupcakes from scratch. Simply use your favorite white cake recipe and enhance it according to my simple instructions. After whipping up the batter, add the marshmallow to the center of each cupcake and bake according to the recipe. Then, decorate the cupcakes with icing, chocolate coins, and a marshmallow on top.

These Lucky Charms marshmallows can be found in most grocery stores and superstores, like Wal-Mart or Target. You can also purchase them on Amazon. But if you can’t find them or don’t have them on hand, don’t worry! You can replace the marshmallow inside the cupcakes with green marshmallows from the fruit-flavored mini marshmallows found in the baking section of most stores. Or skip the marshmallows altogether and simply decorate your cupcakes with green icing and a chocolate coin.

Equipment

  • Cupcake or Muffin Tin
  • Cupcake Liners
  • Mixing Bowl
  • Piping bag or storage bag with corner cut off

Ingredients

  • 1 box white cake mix, prepared per the directions on the back of the box
  • 48 Shamrock Marshmallows (from Lucky Charms)
  • 16 ounces white icing
  • 3 drops Green Food Gel Coloring
  • 24 Chocolate Coins

Instructions

  • Prepare cake mix according to package instructions. Line a muffin tin with different colored cupcake wrappers and fill each wrapper 2/3 of the way full of cake batter
  • Top each cupcake with one shamrock marshmallow and bake according to package instructions.
  • Allow cupcakes to cool completely, then prepare icing by mixing gel food coloring with premade icing. Pipe the icing on top of each cupcake.
  • Top each cupcake with one chocolate coin and one shamrock marshmallow.

Notes

You can use any brand or type of cake mix that you prefer.  Make sure to prepare your cake mix according to the directions on the box.
