RECIPE FEATURES

WHAT YOU’LL NEED

Box Cake Mix – any flavor will do, but white or yellow looks best 

Pillsbury Funfetti frosting – Bright Blue can.  Or vanilla or white frosting and blue food coloring

Rainbow Licorice Ropes – I purchased these from Amazon.  Airheads Extreme Ropes will also work.  One rope per cupcake. 

Mini Marshmallows – any brand, 6 mini marshmallows per cupcake

STEP BY STEP INSTRUCTIONS

Step 1.  Prepare your cake mix per instructions on the box.   

Step 2.  Line a muffin tin with cupcake liners.  Scoop batter into cupcake liners until three-fourths full.  

Step 3.  Bake cupcakes following the instructions on your cupcake mix. 

Step 4.  Place frosting in a piping bag or large Ziploc bag with the corner snipped.

Step 5. Frost cupcakes with the piping bag and blue frosting.

Step 6.  Cut about one third of the licorice rope off and set aside.  Insert the longer piece into the middle of the cupcake.  Make sure to stay towards the middle and not get too close to the edge. 

Step 7.  Place three mini marshmallows on each side of the rainbow licorice to represent the clouds.   Then serve and enjoy. 

TIPS AND FAQS

You can purchase the licorice ropes here on Amazon.  Any type of rainbow rope candy will work just as well. Like Airhead Extreme Ropes or Rainbow Sweetarts ropes. 

You can make as few of these cupcakes as you want, and leave the rest just blue frosted to save on buying the ropes. 

Make sure to fill your cupcake liners three fourths of the way full.  You want a nice and large cupcake to ensure your rainbow has room to drape over the top of the cupcake.  I find that using an ice cream scoop for the batter helps to cut down on the mess. 

HOW TO STORE

Store your Rainbow cupcakes on the counter in a covered container.  You can store them for up to five days.  Be sure to keep them away from heat sources like the oven and stove.  Heat will melt your frosting and dry out  your cupcakes faster.

Ingredients

  • 12 Cupcakes already baked and prepared
  • 12 Rainbow Licorice Rope
  • 72 Mini Marshmalows
  • 1 can Pillsbury Blue Funfetti Frosting

Instructions

  • Place frosting in a piping bag or large baggie and snip corner.
  • Frost cupcakes.
  • Cut about a 1/3 off the licorice ropes and set those aside to snack on later. Insert the longer pieces into the middle of the cupcakes. Make sure to stay towards the middle and not get to close to the edge.

if you cannot find the rainbow licorice ropes that I used any kind of rainbow ripe will work.
