I don’t eat a keto diet however I do like some low carb meals. This Kings Ranch Casserole is no different.  It’s so flavorful and delicious and you don’t even miss the carbs in this casserole.  

I’ve taken this southern casserole and reduced the carbs in it.  It’s delicious and easy to make and will satisfy your cravings for a hearty casserole.  This casserole is the perfect way to use up leftover chicken.

Can I add carbs to this recipe? 

Sure, if you want to add carbs to this recipe.  I recommend adding some cooked rice when you mix up your casserole.  You can also top your casserole with crushed nacho flavored Doritos on the last five minutes of baking for a nice crunchy top. 

What is xanthan gum?

Xanthan gum is a thickener that is made by the bacteria xanthomonas campestris.  It is a powder that when mixed with a liquid it becomes a thickening and stabilizing agent.  Xanthan gum makes for a great low carb thickener in place of flour or cornstarch.

What can I top this with? 

If you want to add a low carb crunchy topping to the top of your Kings Ranch Casserole I would suggest crushing some of the Whips or Moon Cheese and sprinkling them on the top of your casserole.  If you want a more authentic taste you could also crush up some low carb tortilla chips such as Quest protein chips. 

Can I freeze Low Carb Kings Ranch Casserole?

No, the dairy such as heavy whipping cream and sour cream does not freeze well.  Dairy tends to separate when frozen so I do not recommend freezing your Low Carb Kings Ranch Casserole.

Low Carb Kings Ranch Casserole 

  • cooked boneless, skinless chicken breast, cubed
  • olive oil
  • mushrooms, sliced
  • small onion, diced
  • red bell pepper, seeded and diced
  • green bell pepper, seeded and diced
  • cream cheese, room temperature
  • chicken broth
  • diced tomatoes with green chilies
  • taco seasoning
  • shredded colby-jack cheese, divided
  • sour cream
  • heavy cream
  • xanthan gum
  • Salt and pepper, to taste
  • Fresh cilantro

How To Make 

Preheat the oven 350 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.

In a large skillet or dutch oven over medium heat, add the olive oil and add the mushrooms, onions, and bell pepper. Cook until the onions are softened, about 5 minutes.

Add the chicken stock and cream cheese, stirring until the cream cheese is completely melted.

To the skillet, add the tomatoes and taco seasoning. Cook for 2 to 3 minutes or until heated through.

Meanwhile, in a large bowl, stir together 1 cup of cheese, sour cream, heavy cream, and xanthan gum.

Add the contents of the skillet to the bowl and stir to combine.

Transfer to the casserole dish and top each with the remaining cheese.

To bake, place the casserole in the oven for 30 minutes.
