Instant Pot Lemon Chicken Parmesan is thin sliced chicken breasts, coated in a cheesy lemony sauce and cooks right in your Instant Pot! 

Lemon Chicken Parmesan

WHAT YOU’LL NEED

Chicken – Chicken breasts sliced thin

Flour – all purpose or plain flour 

Spices and Seasoning – salt, black pepper, minced garlic, capers, fresh parsley and fresh basil 

Oil – Olive or Canola 

Broth – Chicken broth 

Dairy – Heavy whipping cream, grated parmesan cheese 

Lemons – Juiced or bottled lemon juice 

STEP BY STEP INSTRUCTIONS

Step 1. Slice  your chicken breasts half to make thin or buy pre-sliced.

Step 2. Mix the flour, salt and pepper in a dish.

Step 3. Dredge the chicken generously with the flour.

Step 4. Turn on the saute mode on your Instant Pot.

Step 5. Once the pot is hot add the olive oil.

Step 6. Add the chicken and brown on both sides, about 3 minutes.

Step 7. Remove the chicken and place on the side.

Step 8. Add the minced garlic and toss to cook for 1 minute.

Step 9.Add the chicken broth to the garlic.

Step 10. Allow to cook for 1 minute.

Step 11. Add the chicken back to the instant pot.

Step 12. Add the heavy whipping cream, parmesan cheese, salt, lemon juice, and capers.

Step 13. Then cover the instant pot and seal the vent.

Step 14. Next Set to manual on high for 7 minutes.

Step 15. While the pot is cooking prepare pasta noodles as directed.

Step 16. Allow for a natural release for 4 minutes.

Step 17. Open the lid carefully.

Final Steps

Step 18.Toss the sauce with the pasta.

Step 19. Place the chicken on a parchment covered pan and sprinkle with fresh parmesan.

Step 20. Place in your oven on the broil setting for 2 minutes.

Step 21. Place the chicken on top of the pasta.

Step 22. Garnish and serve 

TIPS AND FAQS

If you do not want to slice your chicken breasts yourself, you can purchase thin sliced chicken breasts in your local grocery store. 

If you do not have fresh parsley or basil, you can substitute with dried.  

Be sure to save some of your parmesan cheese to the side to use as a garnish for your dish.  Or get creative and just add extra on the top and use all of the measured amount in your cooking. 

I prefer to use fresh squeezed lemon juice for this Lemon Chicken Parmesan recipe.  However, bottled will not make a major difference. If that is what you have on hand to use.

You can purchase thin sliced chicken breasts, or you can slice your own.
