Whisk together the together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract. Mix until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Pour 1/4 cup of the batter on a preheated batter or griddle and then cook for 2-3 minutes on each side. Serve with your favorite toppings.

Hint: A great way to keep the pancakes warm while cooking the rest of the batch is to place them on a plate or baking sheet and cover them with a clean kitchen towel.

Storage – Store leftovers in an airtight container or storage bag in the fridge for 3-4 days. 

Freezing – You can also freeze your pancakes for up to 3 months. Place the cooled, stacked pancakes into a freezer bag and remove as much air from it as possible before placing them in the freezer. When ready to eat, thaw in the fridge or reheat from frozen. 

Reheating –  Reheat pancakes in the microwave for 30 to 45 seconds or toaster oven for 1-2 minutes.

  • Don’t overmix your pancake batter, overmixing will make your pancakes tough. Mix until just combined.  
  • Use an oil or butter-infused paper towel to lightly grease the griddle or skillet before cooking each batch.  
  • For an extra special touch, top with fresh whipped cream and a sprinkle of cinnamon sugar.
  • If you decide to make mini pancakes use 1/8 cup of batter instead of 1/4 cup. 
  • When making shaped pancakes use a piping bag or squeeze bottle to pour the pancake batter into the cookie cutter. Don’t remove the cookie cutter until one side of the pancake is fully cooked.
