Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • ½ cup Christmas-themed sprinkles
  • Cooking spray or additional butter for greasing the pan

Optional Toppings:

  • Maple syrup
  • Whipped cream
  • Extra sprinkles for garnish

Instructions

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, beat the eggs and then add the buttermilk, melted butter, and vanilla extract. Mix until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Preheat a griddle or non-stick skillet over medium heat. If using a skillet, lightly grease it with cooking spray or butter.
  • Pour 1/4 cup of batter onto the griddle for each pancake. Drop the sprinkles evenly over the top. Cook until bubbles form on the surface, and the edges start to look set, about 2-3 minutes.
  • Carefully flip the pancake with a spatula and cook the other side until golden brown, about 1-2 minutes more.
  • Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep them warm while you cook the remaining batter.
  • Serve the Christmas pancakes warm with your favorite toppings, such as maple syrup, whipped cream, and extra sprinkles for a festive touch.
