I love carrot cake.  I also love creamy fudge.  When you put the two together it makes for a delicious dessert.  This fudge is a great dessert but it’s also budget friendly.  Most of the ingredients are pantry friendly and something that I usually have on hand all the time. So anytime I get a craving for fudge I can whip up a delicious batch. 

Frequently Asked Questions About Carrot Cake Fudge

What type of chocolate should I use?

You will need to use white chocolate.  I do not recommend using the melting candy for your fudge.  I prefer Ghirardelli white chocolate chips when I am making fudge as I’ve found that I prefer the smoother texture that it gives.  Another option instead of Ghiradelli you could also use Nestle Toll House Premier White morsels.  These also melts well. 

What kind of carrot cake can I use? 

Any type of carrot cake will work great. I used a homemade carrot cake. If you want to save a little time and not make a homemade cake, you can use a box mix.  I like to use Duncan Hines Carrot Cake mix when I am using a box mix however any mix you prefer will work just fine for this recipe. 

How do I store carrot cake fudge?

Always store your fudge in the fridge if you do not eat it right away.  Be sure to keep your fudge in an airtight container.  If the fudge is kept sealed then you can store it for up to one weeks in the fridge. 

Can I freeze carrot cake fudge? 

Technically yes, you can freeze carrot cake fudge.  However I personally don’t like the way the carrot cake changes texture once it’s been frozen.  If you are not texture sensitive you won’t notice a difference when freezing the fudge.  If you do decide to freeze your fudge be sure to thaw your fudge in the fridge NOT on the counter.

How To Make 

Line a 8×8 square pan with parchment paper

Add the chocolate chips, milk, and butter into a medium pot over low to medium heat 

Stir mixture until melted

Fold in 1 C crumbled carrot cake, ½ C chopped pecans and ground cinnamon 

Pour the fudge into the pan and sprinkle the remaining crumbled carrot cake and chopped pecans 

Set aside on the counter overnight to harden 

Once hardened cut into 1 in squares

  • 3 Cups white chocolate chips
  • 14 oz sweetened condensed milk
  • 4 tablespoon butter
  • 2 Cups carrot cake crumbled
  • 1 Cup chopped pecans
  • 1 tablespoon ground cinnamon

Instructions

Be sure to keep your fudge tightly sealed to prevent it for drying out.
