Ingredients

  • 3 cups cucumbers thinly sliced
  • 2 cups fresh strawberries hulled and sliced
  • ¼ small red onion very thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh mint optional
  • Salt and black pepper to taste
  • ¼ cup crumbled feta cheese optional

Instructions

  • In a large bowl, combine the sliced cucumbers, strawberries, and red onion.
  • In a small bowl or jar, whisk together the lime juice, honey, olive oil, salt, and pepper until well combined.
  • Pour the dressing over the salad and gently toss to coat.
  • Sprinkle with fresh mint and feta, if using, then serve immediately or chill for up to one hour before serving for the best flavor.

  • Cut cucumbers and strawberries into similar-sized slices for the best texture.
  • Toss the salad gently to keep the strawberries from breaking apart.
