Slow Cooker Mediterranean Chicken

This Slow Cooker Mediterranean Chicken is tender chicken breasts, cooked with couscous, spinach and flavored with Mediterranean inspired seasonings. Plus, it's so easy to make.

Ingredients

  • 4 chicken breasts cut into bite-size pieces
  • 15 ounces chickpeas canned, drained
  • 14.5 ounces diced tomatoes undrained
  • 13.75 ounces quartered artichoke hearts drained
  • ½ red onion halved and thinly sliced
  • 1 red bell pepper seeded and cut into 1-inch pieces
  • ½ cup halved kalamata olives
  • 1 tablespoon minced garlic
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 3 cups water or chicken broth
  • 2 cups Israeli or pearl couscous
  • 2 cups chopped baby spinach
  • 2 tablespoons crumbled feta cheese optional

Instructions

  • Prepare a slow cooker with nonstick cooking spray.
  • To the slow cooker, add all of the ingredients EXCEPT the couscous, spinach, and feta cheese.
  • Cover the slow cooker and cook on low for 6 hours.
  • Stir in the couscous and continue cooking until the liquid is absorbed.
  • Just prior to serving, stir in the spinach.
  • Serve topped with crumbled feta cheese, if desired

Notes

  • Don't overcook the chicken: Overcooked chicken can become tough and dry. Be sure to follow cooking times and check the temperature of the chicken to ensure that it has reached an internal temperature of 165°F.
  • Use high-quality ingredients: With a dish that has so few ingredients, it's important to use high-quality ones to really let the flavors shine.
