Sausage and Tortellini Bake

This Sheet Pan Smoked Sausage & Tortellini Bake is an easy, budget-friendly dinner made with frozen tortellini, broccoli, and smoky sausage, all roasted together and finished with melted parmesan cheese.

Equipment

Ingredients

  • 12 ounce frozen broccoli florets
  • 3 cloves garlic minced
  • 14 ounces smoked sausage
  • 19 ounces frozen tortellini
  • 8 ounces shredded parmesan cheese
  • 6 tbsp. olive oil
  • Salt and pepper to taste
  • Pinch red chili flakes

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Line a large baking sheet with foil and spray with non-stick spray.
  • Slice the smoked sausage into 1/4 inch rounds
  • Add the smoked sausage, broccoli, and tortellini to a large mixing bowl.

  • Drizzle the olive oil over top, add the garlic, and toss to coat.
  • Add the salt and pepper and red pepper flakes, and toss again.
  • Add to the baking sheet and spread out evenly.

  • Bake for 30 minutes, stirring every 10. For the last 10 minutes of baking time, sprinkle parmesan cheese over top to melt.

Notes

  • Cut sausage evenly so it cooks at the same rate as the tortellini.
  • Toss ingredients thoroughly to make sure everything gets coated in oil and seasoning.
  • Rotate the pan halfway through baking if your oven has hot spots.
  • Let it rest for a couple of minutes before serving so the cheese sets up nicely.

Storage

Storage:
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating:
Reheat in the oven at 325°F until warmed through or microwave in 30-second intervals.
Freezing:
Freeze fully cooled leftovers in a freezer-safe container for up to 2 months. Thaw overnight before reheating.
