Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • 1 egg
  • 1 tbsp melted butter
  • Cooking spray or additional butter for cooking
  • 2 cups whipped cream
  • Fresh strawberries sliced
  • Blueberries or chocolate chips for eyes
  • Banana slice for the nose
  • 4 large marshmallows for the hat pom pom
  • 1 cup miniature marshmallows the the hat trim

Instructions

  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • Whisk together milk, egg, and melted butter in another bowl, then add wet ingredients to dry ingredients and stir until smooth.
  • Heat a large skillet over medium heat and coat with cooking spray or a small amount of butter. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles appear on the surface, about 2-3 minutes. Flip and cook the other side for 1-2 minutes, until golden brown. Repeat with the remaining batter.
  • Place a pancake on a plate. Arrange strawberry slices along the top edge for Santa's hat and place a large marshmallow on the side of the strawberries for the hat’s pom-pom.
  • Use blueberries or chocolate chips as eyes, a banana slice for the nose, and a small sliver of strawberry for the mouth.
  • Create swirls of whipped topping for the beard and fluff on the hat. Decorate the edge of the hat with miniature marshmallows.
