Instructions
Preheat the oven to 350 F. Grease or line a 12-cup muffin pan.
In a separate bowl whisk together the oil, egg, sugars, buttermilk, butter, maple syrup and vanilla.
Add the wet ingredients into the dry ingredients and mix until just combined

Divide the batter equally into the muffins tin. Sprinkle the remainder of the chocolate chips and pistachios.

Notes
If you do not like pistachios you can leave them out of this recipe.
