Pancake Donuts

Ingredients

  • 1 cup pancake mix
  • cup milk or as directed on pancake mix
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract optional
  • ½ cup toppings berries, chocolate chips, or sprinkles
  • Optional toppings: powdered sugar syrup, or glaze

Instructions

  • Preheat a donut pan and lightly grease with butter or nonstick spray.
  • In a bowl, combine the pancake mix, milk, egg, melted butter, and vanilla. Stir until smooth.

  • Spoon the batter into the donut pan, filling each cavity about 1/2 to 3/4 full. Add selected toppings as desired. Do not over-fill.

  • Bake at 375°F (190°C) for 8–10 minutes, or until a toothpick comes out clean.

  • Let donuts cool for a few minutes in the pan, then transfer to a wire rack.

Notes

  • Pipe the batter for clean, uniform donuts.
  • Use nonstick spray generously.
  • Avoid overmixing for a fluffy texture.
  • Smaller toppings are better. Larger pieces of berries and chocolate will sink into the donut.
  • Each donut uses about three tablespoons of batter. 

Storage

  • Storage: Store cooled donuts in an airtight container at room temperature for up to 3 days.
  • Reheating: Warm in the microwave for 10-15 seconds.
  • Freezing: Freeze unglazed donuts for up to 2 months. Thaw and reheat before serving.
